While ramen is often associated with Japanese cuisine, Korea has developed its own unique flavour variations - especially in the instant noodle department - that bring a twist to this beloved dish.

In the mid-20th century, Korea embraced ramen and made it its own, transforming it into "ramyeon" or Korean ramen, which is distinct in flavour and preparation. While Japanese ramen often involves broth made from pork bones (tonkatsu), soy sauce, or miso, Korean ramen tends to lean toward spicy and bold flavours, often featuring gochujang (Korean chilli paste) and kimchi.



Korean ramen also tends to be more affordable and is widely consumed as a convenience food, often coming in an instant noodle form. Despite its Japanese origins, Korean ramen has established its own identity and has become a staple of Korean food culture.


Is Korean Ramen Healthy?


When considering the health aspect of Korean ramen, it’s important to note that the most commonly consumed varieties are instant ramen, which is not necessarily the healthiest option.



Instant ramen often contains high amounts of sodium, preservatives, and artificial flavours. However, Korean ramen can be made healthier depending on how it is prepared. I usually add in some greens, carrots, a side of Kimchi and a soft-boiled egg to balance it off.


What is Korean Ramen called?


In Korea, ramen is commonly referred to as "ramyeon" (라면). The term “ramyeon” typically refers to the instant noodle variety that is immensely popular in Korean households. Some of the most famous Korean ramyeon brands include Shin Ramyun, Samyang Buldak, and Jin Ramen. These instant noodles are famous for their unique flavours and varying levels of spiciness. You can find Korean Ramen more commonly than Japanese and Chinese Ramen.



How to make Korean Ramen noodles?


You've got to follow the recipe on the package. Certain Korean Ramen like Samyang Buldak are best eaten stir-fried while Shin Ramen tastes better as a soupy noodle. Usually, all Instant Noodles that don't come in a cup, need to be boiled on the stovetop for about 10 minutes and then you need to mix in the ingredients.


If you want to balance the spiciness, you can add milk and cheese. I add milk and cheese for Buldak Carbonara to enhance the creamy flavour.



Is Buldak better than Shin Ramen?

Two of the most popular Korean ramen brands are Samyang Buldak (Spicy Chicken Ramen) and Nongshim Shin Ramyun. Both have loyal followings, but they cater to slightly different taste preferences.


  • Buldak: Known for its extreme spiciness, Buldak Ramen is for those who can handle intense heat. It has a rich, savoury flavour profile that’s made with spicy artificial chicken sauce.

  • Shin Ramyun: A classic in the world of Korean instant noodles, Shin Ramyun is known for its more balanced flavour—spicy but not overwhelmingly so, with a deep, savoury beef broth.



The better option comes down to personal preference. If you enjoy extreme heat, Buldak may be your go-to. If you prefer something warm but with more flavour balance, Shin Ramyun might be the better choice.


I love both, but Buldak has a very complex flavour and I eat it when I get the crazy Samyang cravings whereas Shin Ramen is more warm and comforting. I'd get myself a bowl of Shin whenever I feel sick.


How to prepare Premade Japanese Ramen?


Although this article focuses on Korean ramen, many enjoy comparing the Korean variety to Japanese ramen, which is known for its rich, broth-based flavours. Here’s how you can prepare premade Japanese ramen:



  1. Boil the Noodles: Cook the noodles in boiling water for 3-5 minutes, similar to Korean ramen.

  2. Prepare the Broth: Depending on the type of ramen, the broth may come in liquid or powdered form. Mix it with boiling water according to the instructions.

  3. Add Toppings: Japanese ramen is typically garnished with toppings such as nori (seaweed), chashu (braised pork), menma (fermented bamboo shoots), and a soft-boiled egg.

  4. Serve: Once everything is combined, serve the ramen hot.



Premade Japanese ramen tends to emphasize broth, which can be made from pork bones, soy sauce, or miso, unlike the spicy broths of Korean ramyeon.


Which is better, Korean or Japanese Ramen?

When it comes to instant ramen, I prefer Korean over Japanese Ramen, but the debate over which is better, Korean or Japanese ramen, ultimately comes down to personal preference. Japanese Instant Ramen are quite average but;


Japanese authentic ramen is known for its deep, rich broths and traditional toppings. The flavours are more subtle, and the experience is often compared to a gourmet meal. Korean ramen, on the other hand, is famous for its convenience, spiciness, and bold flavours, making it a favourite for those who enjoy something fast and flavorful.



Is Korean Ramen Halal?


Not all Korean ramen is halal, but there are halal-certified options available. Some brands like Samyang and Nongshim offer halal versions of their popular ramen flavours, specifically certified to meet Islamic dietary guidelines. So always look for the halal certification label when buying instant ramen.



Is Korean Ramen Vegan?


Most traditional Korean ramen contains ingredients like meat-based broths or seasonings, making them unsuitable for vegans. However, some brands offer vegan-friendly options that use plant-based ingredients, like certain flavours of Shin Ramyun Veggie or Samyang's vegan versions of their spicy noodles. Shin Ramen Original isn't vegan as it contains beef broth seasoning.
